Ingredients
Cake
3 c. cake flour
3 sticks unsalted butter, room temperature
5 large eggs, room temperature
1 tsp. lemon flavoring
3 c. granulated sugar
1 tsp. vanilla extract
3/4 c. 7Up, room temperature
1 lemon, optional
Glaze
4 tbsp. whole milk
2 c. confectioner's sugar
1 tbsp. lemon flavoring
Directions
Preheat over to 325°F.
Place butter in mixing bowl, mix in granulated sugar. Make sure to mix for 5-6 minutes before adding anything else.
Add eggs one at a time, mixing well before adding another.
If using, add 1 tablespoon of lemon zest.
Add lemon flavoring and vanilla extract while continuing to mix.
Add flour and 7Up, alternating 1 cup of flour and 1/4 cup of 7Up and adding gradually.
Mix for 1 minute.
Butter and flour your angel food cake pan.
Pour batter into the pan and bake for until toothpick comes out clean, about 1 hour.
Allow cake to cool in the cake pan for a minute before flipping onto a cooling rack. Be careful, pan will still be hot.
While cake is cooling, add your powdered sugar, whole milk, and lemon flavor for your glaze into your measuring cup.
Mix them all together until smooth. If you'd like a thicker glaze, add more confectioner's sugar.
Once cake is completely cooled, place on a cake plate and pour glaze over the top.
