Ingredients

Blintzes

  • 1-1/4 c. milk

  • 1 c. all-purpose flour

  • 1/4 c. granulated sugar

  • A pinch of salt

  • 4 large eggs

  • 1 tsp. vanilla

  • 3 tbsp. butter, softened

Cheese Filling

  • 1 c. ricotta cheese

  • 8 oz. cream cheese, softened

  • 1/4 c. granulated sugar

  • 1 egg yolk

  • 1 tsp. lemon juice

  • 1 tsp. vanilla extract

Topping Possibilities

  • Berry sauce

  • Fresh berries

  • Powdered sugar

  • Lemon zest

  • Mint

  • Whipped Cream 

  • Applesauce

  • Syrup

Directions

  1. In a large bowl, combine the ingredients for the cheese filling and mix until smooth. 

  2. Place cheese filling in freezer to chill.

  3. In a blender, mix together milk, flour, eggs, butter, vanilla, and salt. Blend until smooth.

  4. Heat a skillet over medium heat. Pour 1/4 c. of batter into the pan and swirl in a circular motion until the batter is a thin circle. Cook until lightly golden on the bottom, flip and cook on the other side until lightly golden. 

  5. Remove and place on a plate. Keep warm. Continue until all blintzes are completed.

  6. Once the blintzes are cooked, place a large spoonful of the cheese filling about 1" from the bottom. Roll up like a burrito. Fill all blintzes. 

  7. Melt 2 tbsp. of butter and 1 tbsp. oil in a pan over medium heat. Place blintzes in the oil seam down. Cook for 1-2 minutes on each side until golden brown. 

  8. Serve with desired toppings.
