Blueberry Pancakes

Ingredients

  • 3/4 c. milk

  • 2 tbsp. white vinegar

  • 1 c. flour

  • 2 tbsp. sugar

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/2 tsp. salt

  • 1 egg

  • 2 tbsp. butter, melted, plus some for the pan

  • 1 c. fresh blueberries

Directions

  1. In a small bowl, mix the milk with the vinegar and allow it to sit for a few minutes.

  2. In a large bowl, whisk the dry ingredients together. Add the egg, milk, and melted butter, whisking until combined.

  3. Heat a nonstick pan over medium heat. Melt a small amount of butter in the bottom of the pan.

  4. Pour 1/3 c. of batter into the hot skilled and spread it flat. It will be thick. Arrange some blueberries on top. Cook until you see bubbles forming on the top and the edges are starting to firm. Flip with a spatula and cook for 1-2 minutes until pancakes are cooked through. 

  5. Serve warm with maple syrup and butter, if desired.
