Ingredients
2 lbs. ground beef
1 onion, diced
1 jalapeno, seeded & diced
4 garlic cloves, minced
2-1/2 tbsp. chili powder (divided)
1 tsp. cumin
1 green bell pepper, seeded & diced
14-1/2 oz. canned crushed tomatoes
19 oz. canned kidney beans, drained & rinsed
14-1/2 oz. canned diced tomatoes, with juice
1-1/2 c. beef broth
1 c. beer (or extra broth)
1 tbsp. tomato paste
1 tbsp. brown sugar (optional)
Salt & pepper, to taste
Shredded cheddar cheese (optional)
Green onions, chopped (optional)
Sour cream (optional)
Directions
In large bowl, combine ground beef and 1-1/2 tbsp. chili powder.
In a large pot, stir together ground beef, onion, jalapeno, and garlic. Cook until meat is browned. Drain fat.
Add remaining ingredients and bring to a boil. Add more chili powder to taste. Once boiling, reduce to a simmer and cook uncovered for 45-60 minutes, or until chili has reached desired thickness.
Top with cheddar cheese, green onions, sour cream or other toppings if desired. Serve while warm.
