Ingredients

  • 2 lbs. ground beef

  • 1 onion, diced

  • 1 jalapeno, seeded & diced

  • 4 garlic cloves, minced

  • 2-1/2 tbsp. chili powder (divided)

  • 1 tsp. cumin

  • 1 green bell pepper, seeded & diced

  • 14-1/2 oz. canned crushed tomatoes

  • 19 oz. canned kidney beans, drained & rinsed

  • 14-1/2 oz. canned diced tomatoes, with juice

  • 1-1/2 c. beef broth

  • 1 c. beer (or extra broth)

  • 1 tbsp. tomato paste

  • 1 tbsp. brown sugar (optional)

  • Salt & pepper, to taste

  • Shredded cheddar cheese (optional)

  • Green onions, chopped (optional)

  • Sour cream (optional)

Directions

  1. In large bowl, combine ground beef and 1-1/2 tbsp. chili powder.

  2. In a large pot, stir together ground beef, onion, jalapeno, and garlic. Cook until meat is browned. Drain fat.

  3. Add remaining ingredients and bring to a boil. Add more chili powder to taste. Once boiling, reduce to a simmer and cook uncovered for 45-60 minutes, or until chili has reached desired thickness.

  4. Top with cheddar cheese, green onions, sour cream or other toppings if desired. Serve while warm.
