Creamy Rice Pudding

Ingredients

  • 1-1/2 c. cold water

  • 3/4 c. uncooked white rice

  • 2 c. milk, divided

  • 1/3 c. white sugar

  • 1/4 tsp. salt

  • 1 large egg, beaten

  • 2/3 c. golden raisins

  • 1 tbsp. butter

  • 1/2 tsp. vanilla extract

Directions

  1. Pour water into a saucepan and bring to a boil over medium heat.

  2. Once boiling, stir in rice and reduce to low heat. Cover and simmer until rice is tender and water is absorbed, approximately 20 minutes. 

  3. Using a clean saucepan, combine rice, 1-1/2 cups of milk, sugar, and salt. Cook over medium heat and stir often until thick and creamy, about 15 minutes. 

  4. Stir in remaining milk, egg, and raisins. Cook for 2 more minutes, stirring constantly before removing from heat.

  5. Stir in butter and vanilla until combined. 

  6. Serve warm.
