Scrambled Eggs

  • medium bowl

Ingredients

  • 4 large eggs

  • 1/4 c. half & half

  • 1/4 tsp. salt

  • 1 tbsp. unsalted butter

Directions

  1. In a medium bowl, whisk the eggs, half & half, and salt until the mixture is well incorporated, uniform in color, and light and foamy.

  2. Melt butter in nonstick pan over medium heat until butter coats the whole pan and starts to foam.

  3. Add eggs to the center of the pan and reduce heat to medium-low.

  4. When edges of the egg just start to set, use a spatula to push the eggs. Continue to do so, pausing to allow the eggs to settle and good before pushing to form curds in the eggs.

  5. When the eggs are mostly cooked but still look pretty wet, fold the eggs into itself a few times to bring them together.

  6. Remove from heat and serve.
