Spiced Sauteed Spinach

Ingredients

  • Oil, just a drizzle

  • 2 shallots, diced

  • 3-4 garlic cloves, minced

  • 2 tsp. ginger, minced

  • 1 tsp. cumin

  • 1 tsp. turmeric

  • 2 tsp. mustard seeds

  • 1 lb. (10-12 c.) fresh spinach

  • Salt & pepper, to taste

Directions

  1. In a saucepan, cook oil, onion, and garlic over medium heat until fragrant, a few minutes.

  2. Add ginger, cumin, and turmeric and cook for another minute.

  3. Add spinach and mustard seeds, season with salt and pepper.

  4. Toss until spinach is wilted.

  5. Serve
