Stuffed Milkweed Pods

Ingredients

  • 4 oz. softened cream cheese

  • 2 tbsp. red onion, finely chopped

  • 2 tbsp. mushrooms, finely chopped

  • 2 cloves of garlic, finely chopped

  • 1 small jalapeno, finely chopped

  • 2 slices of bacon, cooked

  • 1 tsp. salt

  • 1 tsp. black pepper

  • 20 milkweed pods*

  • Grated cheese, whatever is preferred

Directions

  1. Heat oven to 375°F.

  2. Place milkweed pods in a large pot of water and bring to a boil over high heat.

  3. Boil for 10 minutes. You will hear popping sounds (totally normal).

  4. Drain pot and allow pods to cool.

  5. Place all other ingredients in a large bowl and mix well.

  6. Remove the seeds and silk from the boiled pods, you may have to use a knife to split the pods.

  7. Spoon in filling until the pod is full.

  8. Place pods on a baking sheet lined with parchment paper.

  9. Sprinkle grated cheese of choice over the milkweed pods.

  10. Bake for 15-20 minutes.

  11. Serve warm.
