Ingredients
4 slices crusty bread
1 garlic clove, halved crosswise
1 ripe and soft tomato, halved
Extra-virgin olive oil
Sea Salt
Mayonnaise
1 ripe but firm tomato, sliced
1 white onion, thinly sliced
4 slices cooked bacon, optional
Directions
Toast the bread.
Take each slice and rub with the sliced side of the garlic. Rub each slice with the cut side of the halved, soft tomato. The tomato flesh should stick to the bread. Drizzle slices with olive oil and sprinkle with salt
Spread mayonnaise on top of the tomato-ed bread. Place the sliced tomato on top of a slice of bread, layer onions on top and sprinkle with salt.
Top with bacon if using, then cover with another slice of bread.
Eat carefully, will be messy.
